Savory Tomato Pie

When thinking about what to make for dinner, I usually forget what is in my freezer.
This time I planned my meal around it!
I've had a frozen pie crust sitting at the ready for probably a year. 
I then decided to make a savory pie.
My choices seemed to be quiche or pot pie.
Until I fell upon this tasty recipe for tomato pie!

It is to die for!!
I wasn't sure what to expect as I'd never eaten tomato pie before.
It was like a pizza with fresh tomatoes.
Not gonna lie, I ate two slices.

We had the other half for supper the next night but the tomatoes made the bottom crust soggy by that time, so it wasn't nearly as good. 
Definitely need to eat this bad boy up the day you make it. 
Share it with neighbors, they'll be your best friends.

Adding all the tomatoes to a big bowl

Spices and fresh basil on top, stir and let sit for 10 minutes

A layer of Panko crumbs and mozzarella at the bottom

All my yummy tomatoes piled in! Two heirloom reds, two orange, and a handful of yellow cherry tomatoes

Another layer of bread crumbs and cheese on top

Fresh outta the oven!

You need to try this! It is basically a summer in a shell. Mmm I might just make it again next week!
